Drink Of The Week - Watermelon-Berry Lemonade

Watermelon-Berry LemonadeDoesn't this recipe just make you want to have a big ole glass while sitting on a porch in a creaky rocking chair? Plus it combines everything that screams summer: watermelon, strawberries and lemonade! Serves 12

8 cups cubed seeded watermelon
3 cups hulled and quartered strawberries
2 12-oz. cans frozen lemonade concentrate, thawed
8 cups water
Wedges of fresh watermelon (optional)
Whole hulled strawberries (optional)

1. In blender, combine half of the watermelon, strawberries, and lemonade concentrate. Cover; blend until smooth.

2. Transfer to serving container. Repeat with remaining. Add water; chill up to 2 days.

3. Serve over ice with watermelon wedges and strawberries.

Drink Of The Week - Virgin Bahia

virgin BahiaWith Memorial Day as the unofficial start of summer, this Piña Colada is a perfect way for the gang to enjoy a drink of tropicalness.

5 ounces unsweetened pineapple juice
1 ounce coconut syrup
1 1/2 cups crushed ice
1 fruit stick (pineapple slice, strawberry, etc.), for garnish
1 sprig mint, for garnish

1. Shake juice, syrup and crushed ice in a shaker, and pour into a highball glass without straining. Garnish with the fruit stick and mint sprig.

We Eat Wednesday - Trophy Cupcakes

Trophy Cupcakes eating red velvet cupcakes As I've mentioned before, we heart Trophy Cupcakes in Seattle. And great Caesar's ghost! They are opening another store in the University Village, another favorite haunt of ours. After last week's zoo trip, the boy and I enjoyed us some yummy goodness, the Red Velvet being the only one he'll eat...he's such a 4 year old!

I think they should blow this picture up and put it up in the store, how cute is he? I went to get us some water and he practically inhaled the cupcake by the time I got back.

Tuesday Tutorial - Bottom-of-the-Box Breakfast Sundae

Bottom of the box breakfast sundaeWe recently discovered Rachel Ray's Yum-o! Family Cookbook and just had to try her Bottom-of-the Box Breakfast Sundae. All we had was Trix yogurt instead of vanilla yogurt (yes, I'm a bad mommy!), and it turned out just as tasty. We used Rice Krispies cereal and they loved cutting up the strawberries and layering everything.

1/2 cup berries of your choice
1/2 cup vanilla yogurt
1/4 cup cereal such as cornflakes, Cheerios, etc.

Layer the ingredients into a glass or parfait dish beginning with the berries, yogurt, then the cereal. Repeat two more times to finish with a layer of cereal on top. Serves 1.

Drink Of The Week - Cappuccino Granita

Cappuccino GranitaBe warned, this refreshing granita should be made at least 12 hours ahead so that the ice crystals are frozen solid. Serves 8; recipe courtesy of Williams-Sonoma.

4 cups freshly brewed double-strength coffee
1/2 cup sugar
2 tsp. ground cinnamon
1 1/4 cups heavy cream
semisweet chocolate shavings for garnish

8 store-bought amaretto cookies in wrappers for

1. In a large bowl, combine the coffee, sugar and cinnamon and stir until the sugar is dissolved. Whisk in 1/4 cup of the cream and refrigerate for about 30 minutes.

2. Pour the mixture into a shallow gratin dish and place in the freezer. Using a fork, scrape around the sides of the dish every 30 minutes to break up the ice crystals until all the liquid is completely frozen, about 3 hours.

3. Cover tightly with plastic wrap and keep frozen until ready to serve. (The granita can be prepared up to 2 days in advance and stored in the freezer.)

4. Just before serving, using a handheld mixer, whip the remaining 1 cup cream on medium-high speed until soft peaks form, about 3 minutes.

5. Divide the granita among 8 coffee cups with saucers. Top each cup with a dollop of whipped cream and a sprinkle of chocolate shavings. Place an amaretto cookie alongside each cup and serve immediately.

We Go Wednesday - Oregon Garden Resort

For my birthday/Mother's Day combo a great group of girlfriends and I spent the weekend at the Oregon Garden Resort in Silverton. The weather was perfect, and wouldn't you know it turned cloudy and chilly on Sunday. The spa was AMAZING, I did a body scrub, body wrap and massage. I'm not ashamed to say I dozed off a little, and actually woke up myself snoring a bit. It's OK, my girl said it happens all the time.

We spent one evening in town, it's a quiet, small town, and I like that. In fact, there were signs up about "DON'T BEAVERTIZE SILVERTON" because I guess their neighbor city Beaverton has like Wal-marts and stuff. I totally understand that, since I hate Wal-mart. I just about died and went to heaven in the Thai restaurant we had dinner at, and A was sniffing next to me the whole time, her food was so spicy!

Our hotel package included a few meals in the restaurant which overlooks part of the garden area, which is actually 85 acres of cultivated gardens including a 35 year old reclaimed conifer forest. The food was phenomenal, except the service sucked so bad. There was like 1 waitress for the entire restaurant, and since it is the only place to eat, kinda makes it a busy location. I mean, not even getting water, crying waitresses, botched orders, a hair or two. But I was on vacay, so it's all good. Look at me turning into Fodor' more talking. Go Shawty, It's Your Birthday....

Mother's Day kid collageToday's my 35th birthday (how did THAT happen???) and it's been an awesome start so far. With Mother's Day yesterday, I spent the weekend celebrating it as a combo pack at a wonderful resort and spa in Oregon. Where you say? Come back for We Go Wednesday and I'll tell you all about it!

With the wonderful Mother's Day Tea and Muffins for Mom through both boys' schools last week (aren't they cute?), I've been feeling very special lately. Having lunch with a friend today, eye exam, hot girls' night out tonight, the party keeps on rollin'.

PLUS, I can't say I don't win stuff because I'm butter....I've been on a roll lately (ba-dum bump). A perfect gift; I just slogged through all the emails built up in the inbox and I won the Favor Affair giveaway at Divine Party Concepts. Oh, yes, I'm all over these damask tealight holders, yes I am! And back in March that I totally forgot to send shout outs about, I won one of the invitation giveaways at Invitation Consultants at Little Shindigs. Gotta get a party going on that ASAP.

Drink Of The Week - Molokai Mary

Ok, so the drink is actually called a Molokai Mike, but it's Mother's Day today. Ladies, I lift a cyber toast to us all who could use one of these at the end of every single day. Recipe courtesy of Trader Vic's Tiki Party.

Bottom Layer
1 ounce silver rum
1 ounce orange juice
1 ounce lemon juice
1/2 ounce brandy
1/2 ounce orgeat syrup*
1/2 cup crushed ice

Top Layer
1 ounce gold rum
1 ounce grenadine
1 cup crushed ice

1. Combine the Bottom Layer ingredients in an electric blender and pulse for 1 to 2 seconds, just until blended.
2. Pour into a Molokai Mike glass ('cuz you have one, right?) or double old-fashioned/highball glass.
3. Combine the Top Layer ingredients in the blender and blend until smooth, about 15 seconds.
4. Gently pour over the mixture in the glass.

Fiesta Friday/Real Party - Mamas and Martinis Party

Mamas and Martinis group shotLast week was the first of three martini parties; here are the invitations, which everyone just loved!

I met a great group of women, many of them friends for decades, which I hope I can be like one day. And the stories! Well, I can't share all the details, but when we played "2 Truths and a Lie" it was revealed one broke her tailbone after jumping out of a plane, and the others had no idea. On the bottom of one of the plates was a sticker, where the plate's owner received a little gift bag of lemon soap and massage creme. I love to throw in little giveways, it's one of those touches that really make a party feel special.
